Instaferm® RED Instant Dry Bakers Yeast is instant dry bakers yeast obtained from a specially selected strain of Saccharomyces cerevisiae designed for use in regular bread and high-sugar dough with up to 10% sugar.

Instaferm® RED Instant Dry Bakers Yeast is manufactured in Canada, and is designed for use in regular breads, rolls, pizza, sandwich bread, bagels, and more. This vacuum-packed, 450g brick will make about 100 loaves. It will keep for a year or more stored in an air-tight container in the freezer.

According to the manufacturer, this instant bakers yeast has higher fermentation activity than traditional yeasts. They suggest that you mix this yeast into the dough at the beginning of kneading. The high fermentation activity means that you can use less than you would if you used active dry yeast. The manufacturer recommends using 1 to 1.5% yeast based on flour weight.
