The fruit  pressed and chilled immediately for a clean ferment, then fermented under pressure into natural sparkling wine using the Charmat method. The acid-sugar balance is slightly drier than the 2012 Vintage Chardonnay, but the flavour profile is more floral with enjoyable rosehips, a good moose and bead, and finishing fresh and dryBlend: Shiraz 80% Mourvedre 20%
