The Freedom White has restrained fruit character, with a slight creaminess from 100% malolactic fermentation. Its nice acidity is balanced with a touch of residual sweetness. Again this is made without fining proteins, thus being “vegan friendly”.
Preservative Free means made without adding any preservatives, in particular, sulfur dioxide. It is sought out equally by allergy sufferers and “natural wine idealists. The main concern with white wine is oxidation which essentially means faster ageing, however from our recent tasting of the 2013 vintage, the use of Semillon in the blend gives some delcious mature Semillon flavours even at 15 months from bottling.
