Produced by roller-milling the whole wheat grain, sieving, and then adding back 1/2 the original bran component. Retains a substantial proportion of wheat's nutrients although some of the dietary fibre is lost by removing the bran.
Made from a hard wheat with a protein level of 13% or higher. Is light brown in colour and gives a slightly heartier texture and flavour to baked goods than Kialla plain flour. Must be refrigerated or frozen to retain freshness.
